Ham Preparation
- Have your butcher score the skin of your ham
- Pat the skin dry or leave uncovered in the fridge for 48 hours
- Rub the ham with salt to draw out the moisture from the ham
Cooking Roast Ham
- Heat the oven to 240C fan
- Put the ham in the centre of a baking dish and bake for 40 to 50 minutes until you see the skin begin to crackle
- Reduce the oven to 200c and keep roasting for another hour to 1 hour and 20 minutes when the ham is ready the skin will be nice and golden brown
